Recipe Ingredients for Egg Drop Red Bean Gumbo

1/2 cup oil
1 cup flour
6 cloves garlic, minced
3 stalks celery, chopped
2 onions, chopped
45 oz Creole Cream Style Red Beans
14 1/2 oz Ro-tel tomatoes
4 Veggie Sausage Patties
2 cube Vegetable Bouillon
2 tbsp,+crumbled bay leaves
1 teaspoon salt
8 eggs

Recipe Directions for Egg Drop Red Bean Gumbo

  1. In large pot make roux by heating oil on medium-high heat then adding flour, stirring constantly and cooking until milk chocolate in color.

  2. Add garlic, pepper, celery and onions, cook until onions are clear.

  3. Dissolve bouillon cubes in two cups of water.

  4. Add red beans, Ro-tel tomatoes, bouillon, bay leaves and crumbled sausage patties.

  5. Add about 1 cup of water for thinner consistancy.

  6. Cook about 20 minutes over slow heat for flavors to blend.

  7. Turn heat very low and crack eggs into gumbo around the edges of the pot and in the center.

  8. Let cook for 30 minutes until eggs are done.

  9. Do not stir - make sure pot is cooking on the lowest heat possible to keep from scorching. If you are worried about scorching turn heat off and let eggs cook in the heat of the gumbo for about 40 minutes.

  10. Serve over cooked rice.
