I add a serving of sausage to this and cheese if I have enough calories to spend. Its a great healthy one pan meal. The juice from the tomatoes and chiles is enough that I don't need to use any kind of oil.

Recipe Ingredients for Egg Dinner Scramble

4 oz Green Chile
8 eggs
1/2 cup onions
1 cup cauliflower
1 tomato
1 tsp salt
1 tsp pepper

Recipe Directions for Egg Dinner Scramble

Dice chiles onions, cauliflower and tomatoes. Simmer in frying pan until slightly tender. Pour eggs over the top. Occasially stir until cooked through.
