Recipe Ingredients for Egg Cups

8 eggs
1 c ricotta
2 oz shredded low fat cheddar
1/2 cup green pepper
1/4 cup onion
1/2 cup mushrooms
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Egg Cups

Combine all ingredients except cheese with a mixer. Pour into muffin tin sprayed with Pam. Bake at 350 for 10 minutes, sprinkle cheese on top and bake 12 more minutes.Enjoy!
