Egg Cupcakes Recipe

This recipe is from the book Everyday Paleo by Sarah Fragaso. I put it here for my own benefit of keeping track of my carb count for the day.

Recipe Ingredients for Egg Cupcakes

12 eggs
1/2 lb. bacon
2 zucchini
1 cup roasted red peppers
1/4 onion
3 cloves garlic
4 cups spinach

Recipe Directions for Egg Cupcakes

  1. Break eggs into large mixing bowl.

  2. Put cooked bacon, zucchini, onion, roasted peppers and garlic in food processor and pulse until roughly chopped. Add to eggs.

  3. Put spinach in food processor and pulse until roughly chopped and add to egg mixture.

  4. Pour 1/4 cup of mixture into each hole of two non-stick muffin pans and bake in oven at 350 for 25 mins.
