yummy egg casserole. great for those on a gluten free diet. no wheat.

Recipe Ingredients for Egg Casserole

10 large eggs
4 oz cheddar cheese
1 cup 2% milk
2 tbsp butter
2 red potatoes
1 tbsp olive oil
1/2 yellow onion

Recipe Directions for Egg Casserole

  1. preheat oven to 380 degrees

  2. Chop onion, potatoes, fry in pan with butter until almost cooked through

  3. shred the cheese

  4. whisk eggs, milk in a large bowl

  5. grease bottom and sides of 9x13 pan with olive oil

  6. spread onion/potato mix across bottom of pan,

  7. pour egg mix over the top

  8. sprinkle cheese evenly so that it starts to sink into the liquid

  9. cook in oven for about 30-40 minutes or until a toothpick in the middle comes out clean
