Recipe Ingredients for Egg Casserole

3/4 red bell pepper, diced
5 egg whites
2 whole eggs
1 tsp olive oil
1 cup nonfat yogurt
1/4 cup organic nonfat milk
1 cup ham, diced
2 green onions, diced
1 1/4 cup cheddar cheese, shredded
1/2 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Egg Casserole

Preheat oven to 350F. Saute vegetables and ham in olive oil. Drain and pat dry. Beat yogurt and milk until smooth. Beat in eggs. Stir in cheese, salt, pepper and vegetable mixture. Pour into 11-in. x 7-in. baking dishes. Bake, uncovered for 35-40 minutes or until a knife inserted near the center comes out clean. Broil for the last 3-5 minutes to get a crisp brown crust.
