Low fat, low in calories. Used Simply Potatoes, very low in calories.

Recipe Ingredients for Egg Casserole

6 slices bacon, center cut
16 oz. (2 cups) frozen, hashbrowns, thawed
1 cup low fat cheddar
13 oz. egg beaters
1/2 green bell pepper, chopped
3/4 onion, yellow, chopped
4 oz. mushrooms
3 Pam sprays
4 tsp. extra virgin olive oil

Recipe Directions for Egg Casserole

  1. Pan fry bacon, crumble and set aside.

  2. Heat olive oil, and saute bell pepper, onion and mushrooms.

  3. Mix all in a bowl.

  4. Spray 9x9 in. pan with Pam, pour mixture into pan.

  5. Cook in oven at 350 degrees for approx. 35-40 min.
