This works equally well for breakfast or a light supper. It can be made ahead, refrigerated and then baked just before serving.

Recipe Ingredients for Egg Casserole

2 whole eggs
4 egg whites
1/2 cup lowfat cottage cheese
2 tablespoons flour
1/4 teaspoon dry mustard
1 dash of tabasco sauce
1/8 teaspoon nutmeg
2 scallions
1 cup spinach, cooked and drained
1/2 cup mushrooms
1 teaspoon olive oil
1/2 cup ham
1/2 cup grated medium cheddar

Recipe Directions for Egg Casserole

  1. Lightly beat eggs and whites in a bowl.

  2. Beat in flour, dry mustard, tabasco, nutmeg and cottage cheese.

  3. Saute mushrooms and scallions in olive oil until softened. Drain.

  4. Add spinach, ham, sauted vegetables and cheese to egg mixture.

  5. Pour into a casserole that has been sprayed with cooking spray.

  6. Bake at 350o for 25 - 30 minutes or until knife inserted near center comes out clean. Allow to sit for a few minutes before serving
