Egg Frittata or Pie...great for breakfast, lunch or company. Very easy and quick to make

Recipe Ingredients for Egg and Broccoli Frittata

12 eggs (scrambled)
1 tsp Extra Virgin Olive Oil
1 small onion (chopped)
2 cups broccoli (chopped)
2 potatos (chopped)
1 tbs garlic
1 cup shredded cheddar cheese
1 salt and pepper to taste

Recipe Directions for Egg and Broccoli Frittata

  1. Pre heat oven to 400

  2. Coat pan with EVOO and heat

  3. combine broccoli onion and garlic cook untill soft. About 5 mins

  4. Add eggs

  5. cook until firm, lifting from the bottom so the eggs cook

  6. when firm add cheese to top and place in oven for about 15-20 mins or cheese is bubbly

  7. cover the handle of your pan with foil before you put it in the oven
