For those on a Strict Phase One SB diet, try this egg cup dish for a varaion on the standard scrambled egg. Easy to make for the week, pop a cup in the microwave for 1 min to reheat and ENJOY!

Recipe Ingredients for Egg Breakfast Cups

10 eggs
5 oz bacon
1 red bell pepper
1 onion
4 oz reduced fat cheddar cheese
8 oz mushrooms

Recipe Directions for Egg Breakfast Cups

  1. Set oven to 375

  2. Dice bacon into "bacon bit" size pieces and start to sautee in a dry non stick pan, once the bacon has cooked down some add diced onion and pepper, and sliced mushrooms, cook until much of the veggie liquid has evaporated. Off heat.

  3. While bacon mixture is cooling, beat the eggs in a blender with a grind of black pepper and a dash of tabasco or other hot sauce. Blend until lighter in color, about one min on med speed.

  4. Pour the egg mixture into a greased(spray) non-stick cupcake pan, with an even amount in each cup. Then place an equal amount of the COOLED bacon mixtire in each cup with a few shreds of cheese. Top each cup with the remaining egg mixture, and then top each cup with a few shreds of cheese.

  5. Cook on middle rack for 20 minutes or until egg is set. Allow to cool in pan for 5 min, then remove to a cooling rack. Once fully cooled, cover in container and place in fridge for up to 5 days.

  6. I wouldn't freeze.

  7. The recipe is easily halved for one person.
