Egg Bread Recipe

Delicious... A little like Romanian cozonac, perfect for making french bread. Not too high in calories!

Recipe Ingredients for Egg Bread

5 1/4 cup flour
1 package active dry yeast
1 1/3 cup milk
3 tablespoon sugar
3 tablespoon butter
1/2 teaspoon salt
2 eggs

Recipe Directions for Egg Bread

  1. Combine 2 cups of flour and yeast.

  2. Stir and heat milk, sugar, butter and salt in a saucepan till warm (120-130 degrees) and butter almost melts.

  3. Add to flour mixture, along with eggs.

  4. Beat with electric mixer on low speed for 30 seconds, scraping bowl constantly.

  5. Beat on high for 3 minutes.

  6. Using a wooden spoon, stir in as much of the remaining flour as possible.

  7. Turn out onto a lightly floured surface, knead in the remaining dough until stiff, smooth and elastic (6-8 minutes).

  8. Shape into a ball.

  9. Place in lightly greased bowl, turn to grease other side.

  10. Cover and let rise in a warm place till double (about 60 minutes).

  11. Punch dough down. Turn onto lightly floured surface. Divide in half. Cover and let rest 10 minutes.

  12. Lightly grease two 8x4x2 inch loaf pans.

  13. Put halves in pans, cover and let rise till double (about 30 minutes).

  14. Bake in 375 degree oven for 25-30 minutes

  15. Cover loosly the last 10-15 minutes of baking, if necessary.

  16. Remove from pans to cool.

  17. For raisin egg bread, add 2 cups of raisins when stirring flour in with a spoon.

  18. For cinnamon-swirl egg bread, instead of shaping dough into loaves, roll dough into 12x7" rectangles.

  19. Brush lightly with water.

  20. Combine 1/2 cup sugar and 2 teaspoon ground cinnamon.

  21. Sprinkle half of mixture over each rectangle. Roll up from one of the short sides.

  22. Seal edge and ends.

  23. Place seam-side down, in greased loaf pans.

  24. Let rise... etc.
