Frittata made with Egg Beaters. Use any vegetables and seasoning you like.

Recipe Ingredients for Egg Beaters Frittata

1 cup egg beaters
1 cup baby spinach
1 tablespoon skim milk
1/2 cup mushrooms, sliced
6 cherry tomatoes, sliced in half
1/4 tsp salt
1/4 tsp pepper
28 g 2% cheese

Recipe Directions for Egg Beaters Frittata

Saute veggies in pan. Mix together Egg Beaters, 1/2 of cheese, milk, salt and pepper. Add egg mixture to veggies and scrambled slightly until about 75% egg is set. Then continue to cook until bottom is set. Sprinkle remaining cheese on top. Put in oven on high broiler setting and let cook for another few minutes until top is brown. Then let set for another five minutes before slicing. (NOTE: Use an oven ready pan or transfer frittata onto a pan made for the oven.)
