Egg Beater Quiche Recipe

This is a lighter version of a spinach quiche, made in muffin tins for easy grab n' go. Makes 8 muffins. Serving = 1 muffin.

Recipe Ingredients for Egg Beater Quiche

1 cup Original
10 oz Spinach
1/2 cup, chopped Onions
1 tbsp Extra Virgin Olive Oil
3/4 cup Reduced Fat Mild Cheddar Shredded Cheese
1 pieces Garlic Cloves
3 slices COOKED Center Cut Bacon

Recipe Directions for Egg Beater Quiche

  1. Preheat Oven to 325

  2. Saute 1 Tbs olive oil in pan with garlic and onion until soft.

  3. Lightly steam fresh spinach (rinsed), over medium heat, just until wilted. Squeeze all excess water from spinach and chop into bite sized pieces.

  4. Fry 3 pieces of bacon until crisp. Blot all grease and break into pieces.

  5. Combine onion mixture with bacon, spinach, cheese and 1/2 C of the egg beaters. Reserve other half of egg beaters.

  6. Spray muffin tins. Do not use papers.

  7. Divide cheese mixture evenly (should make about 8 muffins).

  8. Take the rest of the egg beaters (about 1/2 C) and drizzle evenly over muffins. Do not overfill.

  9. Bake 25 minutes or until knife comes clean.
