Very tasty egg dish perfect for southwestern breakfast.

Recipe Ingredients for Egg Bake with Cottage Cheese and Diced Chiles


Mix together:
8 whole eggs
4 egg whites
1/2 cup flour
1 tsp baking powder
1 cup low fat cottage cheese
1 1/2 cups shredded Monterey Jack cheese
8 oz diced chiles
1/8 cup melted butter
1 Salt and pepper to taste

Recipe Directions for Egg Bake with Cottage Cheese and Diced Chiles

  1. Mix Together ingredients

  2. Pour into 9 x 13 pan

  3. Bake at 350 for 35 minutes. You can make this the night before.
