Recipe Ingredients for Eenie Meenie Fettuccine

12 oz fettuccine, high fibre
1 tbsp butter
2 cloves garlic, minced
1 1/2 cups 2% milk
1 1/2 tbsp all purpose flour
1/2 cup parmesan cheese, reduced fat
1/2 tsp dried basil
1/4 tsp salt
1/4 tsp pepper
1 can tuna, water packed
1/4 cup sour cream, low fat
3/4 cup peas, frozen
2 tbsp fresh parsley

Recipe Directions for Eenie Meenie Fettuccine

  1. Makes approx 9 cups

  2. 1 serving = 1 cup

  3. Cook fettuccine;drain

  4. while pasta cooking, prepare sauce.

  5. melt butter over med heat. add garlic, saute 1 min.

  6. Add milk and flour. Whisk until smooth.

  7. Increase heat to med-high. Cook & stir intil bubbly & thickened. approx 4-5 mins.

  8. Reduce heat to low 4-5 mins. Stir in parmesan, basil, salt, pepper. Cook 1-2 more mins until cheese melted.

  9. Stir in Tuna, sour cream, peas, cook until heated through. Add to sauce to pasta, top with fresh parsley.
