Recipe Ingredients for Ed's Veggie Chili with Beans, Quinoa and Lentils

1 1/2 cup Diced Tomatoes with jalapenos
1/10 cup black beans
1/10 cup pinto beans
1/10 cup red beans
1/4 cup quinoa
1/4 cup lentils
1 cup water
1 tablespoon salt
1 tablespoon dark brown sugar
1 tablespoon chili powder

Recipe Directions for Ed's Veggie Chili with Beans, Quinoa and Lentils

  1. Put one cup water in pot and place on high heat.

  2. Rinse lentils while water heats

  3. Put lentils, quinoa and beans into pot

  4. Heat to boiling, then turn immediately to simmer.

  5. Simmer for at least 30 minutes.

  6. Add diced tomatoes and jalapenos

  7. Add Chili Powder, brown sugar & kosher salt to taste.

  8. Simmer until "it's chili" and not just "soup".
