The chicken and dried shiitake mushroom combination is very traditional. Stirring the mixture frequently will ensure a smooth creamy texture. Otherwise, you will note that the congee separates when it begins to cool.

Recipe Ingredients for Edison's Famous Congee

14 cups water
12 ounce chicken, (2 legs, skinless, bone-in)
1 1/4 cups rice
1 cup shiitake mushrooms, dried, thinly sliced, about 12-15
1/2 cup fresh ginger, julienned
1 salt
1 pepper

Recipe Directions for Edison's Famous Congee

  1. Pour water into large pot.

  2. Remove skin and any excess fat from both chicken legs. Put into pot, along with white rice. Add in ginger. Bring to a boil.

  3. In the meantime, soak dried shiitake mushrooms for about 1/2 hour in hot water. When hydrated, drain, remove stems, and thinly slice mushrooms. Add to congee.

  4. When the pot of water and rice comes to a boil, reduce to low heat. Simmer for 2 hours, stirring every half hour. When 1 1/2 hours have passed, remove chicken legs. Cool, and remove meat. Discard bones. Return meat to congee and simmer for remaining 1/2 hour.

  5. Add salt and pepper to taste.
