Recipe Ingredients for EDAMAME SUCCOTASH

4 oz Gourmet Mushroom Blend Packaged
2 1tsp Olive Oil
1/4 tsp Sea Salt
1 dash Pepper, Black
16 oz Edamame Soybeans Shelled
2 cup Whole Kernal Corn
1 cup Craisins, Sweetened Dried Cranberries
1/2 cup Red Roasted Peppers
2 tbsp Sweet Red Chili Sauce
1/4 tbsp Red Curry Paste
2 tbsp Mirin (rice cooking wine)
1 1/2 tbsp Toasted Sesame Oil

Recipe Directions for EDAMAME SUCCOTASH

  1. Sauté mushrooms over medium-high heat in olive oil with salt and pepper for 7 to 8 minutes or until mushrooms give up their liquid. Place edamame and corn in a large serving bowl. Add hot cooked mushrooms, cranberries and peppers.

  2. Make dressing by whisking together Thai sweet red chili sauce, Thai red curry paste, mirin, and toasted seame oil. Gently toss together and adjust seasoning to taste.
