This is a cold edamame salad that you can make days before or just have in the fridge to snack on.

Recipe Ingredients for Edamame Salad

3 cup Shelled Edamame
2 cup Spelt Berries
0.5 cup chopped Red Onion
3 tbsp Olive Oil
3 oz Cojita
1 lemon yields Lemon Juice
1/4 cup leaves, whole Basil, Fresh

Recipe Directions for Edamame Salad

boil the edamame until cooked and rinse. Add the cooked spelt berries, red onion and cojita cheese (any cheese will work). Mix the olive oil, lemon juice, basil, salt and whatever other seasoning you want. Mix the dressing in with the other ingredients until everything is coated. Put in a contained and keep in the fridge. The longer it sits, the better it is.
