Edamame, Avocado and Pumpkin Seed Salad

Recipe Ingredients for Edamame Salad

1/4 cup white vinegar
1 teaspoon dijon mustard
1 tablespoon lemon juice
1/4 cup olive oil
1/4 cup diced red onion
16 ounces edamame
1/2 cup finely diced carrot
1/2 cup Radishes
1/2 cup finely diced celery
1/2 cup pumpkin seeds
2 avocados

Recipe Directions for Edamame Salad

  1. In a bowl large enough for the salad, whick together vinegar, salt & pepper, 1 Tbsp Splenda, mustard, lemon juice and olive oil. Ad the diced onions and set aside.

  2. Prepare the edamame according to package directions; rinse in cold water. Once colled, in the vinaigrette bowl, toss the edamame, carrots, radish, celery, avocado, and pumpkin seeds. Season to taste with salt and pepper. You can make ahead, but add the avocado just before serving.
