A tasty light salad thats either a great lunch or side. No need for added protein thanks to the quinoa and the edamame.

Recipe Ingredients for Edamame salad

12 ounces edamame, about 2 cups
1 cup quinoa
1/4 cup finely diced scallion
1 clove garlic, minced
1/4 teaspoon freshly ground black pepper
1 cup chopped fresh tomato
1/4 cup chopped fresh basil leaves
1 tablespoon red wine vinegar

Recipe Directions for Edamame salad

  1. prepare quinoa accourding to package, set aside.

  2. edamame, scallion, garlic, olive oil, salt and pepper, tomato, basil and vinegar. Add cooled quinioa. Adjust salt and pepper to taste
