Recipe Ingredients for Edamame (not) Hummus

12 oz. edamame, frozen
2 tbsp. lemon juice
1 minced clove garlic
1/2 c. water
2 tbsp. sesame oil
2 T tahini
1 Salt and pepper to taste

Recipe Directions for Edamame (not) Hummus

  1. Puree the shelled, skinned, cooked edamame in a food processor with lemon juice, minced garlic, water (or chicken or vegetable stock), and sesame or chili oil, and optional tahini.

  2. Salt and pepper to taste.

  3. Use more liquid to thin the hummus to desired consistency.
