Recipe Ingredients for Ecuadorian Shrimp over Quinoa

1 lb shrimp
1 cup orange juice
1 tsp mustard
2 medium green onions, chopped
2 medium tomatoes, chopped
1 tsp cilantro, chopped finely
1 tsp salt
1 tsp sugar
1/4 tsp ground pepper
1 cup Quinoa Organic
8 cups Spinach

Recipe Directions for Ecuadorian Shrimp over Quinoa

  1. Purchase pre-cooked, frozen, peeled, & de-veined shrimp of whatever size you prefer. Defrost and pour with juice into a glass bowl. Remove tails if present.

  2. Dissolve well the prepared mustard paste in the cup of orange juice.

  3. Add the orange juice and the rest of ingredients to the shrimp, stir well. If there isn't enough fluid add about 1/2 cup water. Place the dish in the refrigerator and marinate for two hours.

  4. Serve over quinoa or brown rice and spinach.
