a veggi style enchilada casserole

Recipe Ingredients for Echilada Layer Casserole

1 cup frozen corn
2 cups diced butternut squash
15 oz can black beans
29 oz diced chili ready tomatoes
6 white corn tortillas
1/4 cup garbanzo beans
1/4 cup kidney beans
2 cup broccoli
1 cup carrot
20 oz enchilada sauce
1/2 cup frozen green beans
2 tsp cumin
1 cup shredded Colby Jack cheese
1/2 cup light sour cream

Recipe Directions for Echilada Layer Casserole

bring ingredients (minus tortillas and half of ench sauce) to a boil and then reduce by half. When mixture becomes thick, make layers with tortillas and veggi mix much like you would make lasagna in a 9x13 dish. add cheeze to top and and bake at 350 till cheese is melted. cool and serve with scoop of sour cream.
