Recipe Ingredients for Eating Well Turkey Piccata

1 fruit (2-1/8" dia) Lemons
0.5 tsp Sea Salt
0.5 tsp Pepper, Black
16 oz raw Turkey Breast Cutlet
2 1tsp Olive Oil
2 cloves, raw Garlic
1 cup Light
1 serving Capers
2 tsp Sugars, Granulated
0.5 tbsp Butter

Recipe Directions for Eating Well Turkey Piccata

  1. remove lemon skin and pith, seperate lemon membranes from segement membrane. Chop segments with reserved juice.

  2. salt and pepper turkey, brown in skillet. Set aside on platter to keep warm.

  3. add garlic, saute 1 minute. Add chicken broth, scrapping up browned bits. Stir in reserved lemon & juice, capers and sugar. cook 30 sec. Whisk in butter.

  4. Spoon sauce over cutlets.
