Recipe Ingredients for Eating Clean Turkey Meatloaf

2 tbsp olive oil, best quality
2 large Vidalia onion(s), finely chopped
1/2 cup celery, finely chopped
6 cup baby spinach, washed
6 cup arugula, washed
1 tsp water
1 cup basil
1/4 cup cilantro, minced
4 egg whites
1 large egg yolk
1 tbsp canned tomato paste, mixed with one tablespoon water
3/4 cup reduced-sodium chicken broth
2 lbs uncooked lean ground turkey
3/4 cup uncooked oatmeal, ground in blender
1/4 cup ground flaxseed

Recipe Directions for Eating Clean Turkey Meatloaf

  1. Preheat oven to 375F/190C. Make sure there is a rack in the venter of the oven. Heat olive oil in a nonstick pan and cook onions and celery untl they are translucent but not brown. Season with salt and pepper and transfer to a small bowl to cook.

  2. Add baby spinach and arugula leave to the pan withone teaspoon of water. Cook until the greens are wilted. Remove from heat and let cool. Ad basil and cilantro to the wilted greens and mix well.

  3. In a large bowl add edd whites, yolk, tomato paste mixture, and stock. Mis well. Add ground turkey or Textures Vegetable Protein, oat bran, and flaxseeds along with cooked onions and celery. Spray clean hands wth teh cooking sprat and miz the turkey concoction will.

  4. In a 10" loaf pan coated with cooking spray, place half the turkey mixture. Spread evenly. Using clean hands, transfer wilted greens and herbs to loaf pan. Distribue evenly on top of the turkey mixture already in the pan. Now place remaining ground turkey mixture on top of hte wilted greens. Make the top smooth with your hands.

  5. Back the turkey for 1 1/2 hours or until a meat thermometer registers 160F/70C. Remove loag from the oven and let cool from 15 minutes so everything seats properly. Once cool, remove the loaf from pan and cut into one inch slices using a very sharp knife. Arrange on a serving platter and serve immediately. Refrigerate leftovers and use for lunch
