Missing those rich cream sauces? Try this one it might satisfy that craving. From the "Eat to Win" book by Dr. Robert Haas from the 80's

Recipe Ingredients for Eat to Win Pasta and Garlic Sauce

2 cups Cottage Cheese, Lowfat, 2% Milkfat
4 tablespoons Evaporated Skim Milk
1/4 teaspoon white pepper
2 teaspoons dried parsley
18 g Garlic
2 teaspoons Tamari soy sauce
8 oz whole wheat spaghetti

Recipe Directions for Eat to Win Pasta and Garlic Sauce

  1. Place first 6 ingredients in a blender or food processor. Mix until completely smooth.

  2. Place in a double boiler on medium heat. Heat until bubbly around edges.

  3. Pour over cooked spaghetti and toss gently.

  4. Sprinkle with Parmesan cheese (optional) (not calculated into calorie count) serve immediately.

  5. my notes: If you try to microwave you must lower the power on your microwave to 50% power. Stir every minute. This may take about 2-3 minute to heat through but if you heat it at high it will break and curdle so keep an eye on it.

  6. Also if you don't like the taste of raw garlic try roasting the garlic before blending. 18 g of garlic is about 6 cloves.
