One pot meal that really fills you up!

Recipe Ingredients for Eat More (or Italian Goulash)

1 lb 90% lean ground beef
6 oz whole wheat macaroni
8 oz crushed tomatoes
2 cloves garlic
1 tbsp olive oil
1 cup chopped zucchini
1 small onion, chopped

Recipe Directions for Eat More (or Italian Goulash)

  1. Boil water to cook macaroni. Do not add salt to the water. Cook until slightly less than al dente.

  2. Lightly saute minced garlic and onion in olive oil. Add ground beef and brown completely. Drain off extra fat.

  3. Add crushed tomatoes, and mix thoroughly. Season with basil, oregano, thyme as desired. Heat until bubbling.

  4. Add about a quarter cup of water and the cooked macaroni. Cook for about 10-15 minutes on low heat or until macaroni is cooked to your preference.

  5. Add in zucchini and cook about 5-10 minutes more until still crisp, but warm.

  6. Serve with a light sprinkling of parmesan or low-fat mozzarella on top.
