This recipe is from the Eat-Clean Diet Website. The recipe calls for 1/4 cup of Fat-Free Cottage Cheese but CC would only refer to the 2% Low Fat Cottage Cheese. I altered the serving to make the numbers right. Great on GG Bran crispbread or Wasa bread. 1 Serving is one cup of egg salad.

Recipe Ingredients for Eat-Clean Egg Salad

0.17 cup cottage cheese
1 tbsp fat free milk
1 tsp dijon mustard
3 large egg whites
1 large egg
2 tbsp green onion
2 tbsp celery
1/4 tsp curry powder
1/4 tsp salt

Recipe Directions for Eat-Clean Egg Salad

  1. Whip cottage cheese and milk until smooth in medium-sized mixing bowl.

  2. Blend remaining ingredients except egg whites with cottage cheese mixture.

  3. Add diced egg whites to cottage cheese mixture. Mix well.
