These pancakes are a great way to start off the day with plenty of energy and vitamins to give your body what it needs to cope! Especially with some fresh fruit and a cup of hot tea or coffee. (easy on the sugar though!)

Recipe Ingredients for Easy Whole Wheat Multigrain Pancakes

1/2 cup whole wheat flour
1/2 cup rye flour
1 tbsp soy flour
1 tbsp brown sugar
1 1/2 tsp baking powder
1/8 tsp salt
1/8 tsp ground cinnamon
1/2 tsp vanilla extract
3/4 cup water
3/4 cup soy milk
1/4 cup chopped pecans

Recipe Directions for Easy Whole Wheat Multigrain Pancakes

  1. In a medium bowl, stir together the whole wheat flour, soy flour, sugar, baking powder, salt and cinnamon. Make a well in the center, and pour in the vanilla, water and soy milk. Mix until all of the dry ingredients have been absorbed, then stir in the pecans.

  2. Heat a large skillet or griddle iron over medium heat, and coat with cooking spray. Pour about 1.3 cup of batter onto the hot surface, and spread out to 1/4 inch thickness. Cook until bubbles appear on the surface, then flip and brown on the other side. Serve warm with blueberries, or other fruit or fruit spread and/or pure maple syrup for a delightful breakfast!
