Recipe Ingredients for Easy Veggie Soup

1 tsp olive oil
1/2 c chopped onion
1/2 c diced red bell pepper
1 tsp minced garlic
1 1/2 c water
28 oz diced tomatoes
14 oz tomato sauce no salt added
10 oz frozen corn
10 oz frozen green beans
10 oz frozen carrots
1 tsp seasoning salt
2 T Italian seasoning
1 tsp sugar
1 ground pepper to taste
5 oz grated parmesan

Recipe Directions for Easy Veggie Soup

  1. Heat the oil in a soup pot

  2. Add the onion and bell pepper and sauté until soft

  3. Add garlic and continue sautéing for 3 minutes

  4. Add water, veggies, and tomato sauce and tomatoes

  5. Heat on low heat until warm

  6. Add seasonings

  7. Cover and simmer until all veggies are heated through (20 minutes or longer)

  8. Serve with grated parmesan cheese on top if desired
