Get your veggies and plenty of protein in this high-fiber dish. Of course, if you have high cholesterol, supplement 5 whole eggs with 9, 10, or 11 egg whites. If on a restricted sodium diet, ditch the salt and use egg whites. *Protein powder is optional, but it will change the protein content in the nutrition label. We use whey protein isolate, 90% whey protein, tasteless, flavorless, no sugar or additives.

Recipe Ingredients for Easy Veggie and Protein Egg Bake

9 oz frozen spinach
14 1/2 oz diced tomatoes
10 oz frozen corn
5 eggs
2 c skim milk
2 scoops protein powder
1/8 t salt
1/4 t pepper
2 garlic cloves, pressed
1/2 c milled flax seed
2 oz mozzarella cheese, low-fat

Recipe Directions for Easy Veggie and Protein Egg Bake

  1. Preheat oven to 400 F

  2. Thaw frozen vegetables.

  3. Scramble eggs with milk and whey protein powder and milled flax seed.

  4. Pour onto greased 9X11 casserole dish.

  5. Add corn on top of egg mix.

  6. Squeeze out excess moisture in thawed spinach.

  7. Layer spinach on top of corn.

  8. Sprinkle diced tomatoes on top.

  9. Cook approximately 35 minutes or until liquid is set and sides are golden.

  10. Top the casserole with thinly sliced pieces of cheese while it's hot.
