Good served with cottage cheese, brown rice or toast. Also yummy with some cheese melted on the top. It is a pretty heart veggie dish to eat alone as well You can add an onion, garlic, the whole pepper or whatever you have, this is a clean out the fride sort of dish.

Recipe Ingredients for Easy Veggie Curry

14 oz diced tomatoes, canned
14 oz white beans
1 tomato
2 cups carrot
350 grams firm tofu
1/2 green pepper
1/2 red pepper
1 tbsp curry powder

Recipe Directions for Easy Veggie Curry

  1. Sear onion and peppers in a smoking hot skillet (don't worry if it burns a little, that adds flavour, just let it get a little soft)

  2. Add these with caned tomatoes, diced fresh tomato, beans(drained and mashed), and shredded carrot. Simmer for 10 minutes.

  3. Cut tofu into long, 1/8-1/4 inch wide strips, cover in simmering mixture, add curry powder and allow to simmer for an additional 10 minutes.

  4. Allow to cool and meld for 10ish, and serve.
