Use a food processor to chop the veggies, and this soup is assembled in 15 minutes. The carnivores in our house add their own ham to their bowls at serving time!

Recipe Ingredients for Easy Vegetarian Split Pea Soup

16 ounces dried split peas
4 cups celery, small dice
2 cups onions, small dice
16 ounces carrots, small dice
8 cups of water
1 tablespoon salt
2 tablespoons olive oil
8 ounces v8 juice

Recipe Directions for Easy Vegetarian Split Pea Soup

Place olive oil in soup pot, add chopped onion, celery and carrots. Rinse split peas and add to the pot. Add water,salt, and v8 juice. Cook with the lid slightly ajar for about 3 hours, or until soup is the desired consistency.
