I found this recipe on here but the directions were not complete. And somehow they had 3 cups of cheese on theres and it was lower and calories. This recipe is honest.

Recipe Ingredients for Easy Vegetarian Enchiladas

1 tablespoon olive oil
1 small onion
1 tablespoon chopped garlic
1 tsp ground cumin
1 cup [95047] cup 3/4
8 oz frozen spinach
24 oz Enchilada Sauce
14 Extra Thin Yellow Corn Tortillas
5 serving serving 2% Milk Reduced Fat Mild Cheddar

Recipe Directions for Easy Vegetarian Enchiladas

  1. Sautee onion, garlic, cumin unitl onion is soft. Add spinach and black beans cook until warmed through.

  2. Take 9x13 baking dish and put some enchilada sauce on the bottom of the pan. Warm corn tortillas fill with beans and a small amount of cheese place in baking dish. Repeat for remaining tortillas.

  3. Top with remaining sauce and cheese. Cover with foil and bake at 350 for 30 minutes. Serve and Enjoy.,
