Note that I actually used 8oz canned low-fat brisket, which the database doesn't have. I picked the closest thing I could find, and altered the serving size to get the calories in line, but the protein count may be off.

Recipe Ingredients for Easy vegetable beef stew

3 carrots
3 medium turnips
1 small onion, diced
4 cups beef broth
4 cloves garlic
2 cups spinach, washed and chopped
1 1/2 cups cabbage, chopped
1 cup peas
1 tbsp Smart Balance
4 oz lean beef
2 tsp cornstarch or tapioca flour

Recipe Directions for Easy vegetable beef stew

  1. Heat Smart Balance in a deep pan over medium heat. Add diced root vegetables and saute until onions are translucent.

  2. Add chopped garlic and saute until fragrant. Add beef broth and bring to a boil. Reduce heat and simmer until vegetables are tender (about 15 min).

  3. Add canned beef and simmer 5 minutes.

  4. Add roughly-chopped greens and peas, and simmer until greens are just wilted (about 3 minutes). Add cornstarch and simmer until thickened slightly (about 2 minutes). Add black pepper to taste and serve.
