Spread on some Earth Balance or peanut butter, then drizzle with maple syrup for a morning treat. Inspired by One Frugal Foodie (http://www.onefrugalfoodie.com/2010/05/06/whole-wheat-vegan-pancakes/). For an extra special treat, top with fresh fruit such as strawberries or blueberries.

Recipe Ingredients for Easy Vegan Pancakes

1 cup all purpose flour
1 tbsp Baking Powder
1/2 tsp Ground Cinnamon
1/8 tsp Salt
1 tbsp brown sugar
1 cup Silk soymilk
1 1/2 tbsp Oil

Recipe Directions for Easy Vegan Pancakes

  1. In a medium-sized bowl, combine the flour, baking powder, cinnamon, and salt, and set aside.

  2. In a measuring cup, combine the brown sugar, soymilk, and the oil. Whisk into the flour mixture. If the batter is too thick, add a bit more soymilk.

  3. Spray skillet with nonstick spray and heat it until it's warm.

  4. Pour the batter into the skillet to make whatever size or shape of pancakes you like. Cook over medium heat, reducing heat to medium-low if the skillet gets too hot.

  5. Wait until you see bubbles break at the surface after a couple of minutes, then flip. Cook for about about 1 minute on the other side. Remove from the pan, and pour in the next batch of batter.

  6. Repeat until the batter is used up.
