Recipe Directions for Easy Tofu Veggie Stir Fry - Vegetarian

  1. Drain and pat dry tofu. Slice into slabs and with 1 tbsp olive oil in frying pan, pan fry tofu until desired crispiness is reached (flip after 3-5 minutes).

  2. While tofu is cooking/crisping, wash and chop veggies to your liking (similar size pieces for best cooking results).

  3. Remove tofu from pan, chop into cubes or smaller pieces.

  4. In frying pan, add other 1tbsp oil and add onion, after 1-2 minutes, add garlic, ginger, stir, then add veggies and tofu. Mix thoroughly and stir in sauce - if too dry add some water (1/8 to 1/4 cup).

  5. Stir to coat veggies/tofu and cover, cook med/med high for 4-5 minutes, stirring/mixing once in the middle. If you prefer softer veggies, cook longer, stirring often to prevent burning or overcooking.
