A relatively easy and modified shepard's pie.

Recipe Ingredients for Easy Shepard's Pie

3 lbs potatoes
1 lb ground beef
1 1/2 onion
14 1/2 oz sweet peas
14 1/2 oz corn
2 oz fat free cheddar cheese
1/4 cup fat free milk
2 oz beef stock
1 tbsp paprika

Recipe Directions for Easy Shepard's Pie

  1. Boil potatoes in large pot of water.

  2. Meanwhile, saute the onions and paprika until nearly translucent. Add beef and cook until beef is browned.

  3. Mash potatoes with milk and beef stock.

  4. Layer at least an 8 by 8 casserole dish with half the mashed potatoes spread evenly. Add half the peas, and then half the corn spread evenly. Add beef mixture. Add remaining corn and peas spread evenly. Top with remaining mashed potatoes. Cheddar cheese can be put on the top with salt and pepper, if desired, or more paprika.

  5. Bake at 350 until cheese on top is melted and potatoes on top are turning slightly crisp.
