Recipe Ingredients for Easy rainbow burrito casserole

1 red onion, chopped
2 orange bell peppers, chopped
1 1/2 cup vegetarian refried beans
16 oz chickpeas
1/4 cup lime juice
16 oz crushed tomatoes with green chilis
16 oz canned corn
6 cloves garlic, minced
16 oz salsa
16 oz salsa verde
4 9" tortillas
1 T salt
1 T pepper
2 T hot sauce

Recipe Directions for Easy rainbow burrito casserole

  1. Combine veggies, chickpeas, garlic, lime juice, salt, pepper (salt and pepper can be to taste as well as hot sauce) and hot sauce in a large bowl. Marinate 2 hours. Pour jar of salsa verde in the bottom of 9x13 casserole pan, covering the bottom. Wrap 2/3 cup (or however much you can fit) veggies in each tortilla, and place seam-side down on top of salsa verde. Spread refried beans over the top of burritos. Top with remaining veggies and the other jar of salsa. Bake at 350 degrees for 30-40 minutes or until hot.

  2. Can be topped with cheese, guacamole, or sour cream (although this will change the calorie and fat content substantially).
