feel-good kinda food..healthy, vegetarian / (vegan?) quinoa salad - contains plenty of omega-3 fat, fair amount of protein.. and tastes so good!

Recipe Ingredients for Easy Quinoa Salad

Tomatoes, Red, Ripe
Lettuce, Iceberg
Cucumber
Onions
Lemon Juice
Flaxseed Oil, Organic
French Dressing
Quinoa

Recipe Directions for Easy Quinoa Salad

  1. cook quinoa (optional: add 1 tsp ginger, a pinch of salt and a tsp of honey (not vegan) for good taste).

  2. allow the lettuce to soak in cold water (makes it more crunchy) - meanwhile.. do this:

  3. in a small bowl: 2.5 tbs of flaxseed oil + same amount of water, 1 tsp of french salad dressing (powdery), 3 tsp of lemon juice and mix..

  4. Now chop the lettuce, cucumber, tomato and onion, throw it in a bowl and add the dressing (optional: add a few cubes of feta cheese (not vegan) : so good!)

  5. After allowing the quinoa to cool down after being cooked, you may mix everything together, or have the quinoa seperately..
