Recipe Ingredients for Easy Quinoa Salad

1 1/2 cup quinoa
1 cucumber, chopped/diced
1 tomato, chopped/diced
2 tbsp parsley
2 tbsp cilantro
1/4 cup vinegar
1 salt and pepper to taste

Recipe Directions for Easy Quinoa Salad

Cook quinoa per package directions. Let it cool. Combine all ingredients and refrigerate for 20 minutes. Then you are ready to enjoy
