This vegetarian recipe is easily prepared, and quick too. It is great served over a jacket potato for a filling meal, or alternatively could be eaten with wholegrain rice, millet, wholewheat couscous, or spelt/multicereal pasta. I like to top with about three thin slices of a small round of goat cheese. When served, be sure to sprinkle a few dried chilli flakes, and some more course ground black pepper, this looks especially nice on top of the goat cheese.

Recipe Ingredients for Easy Quick Rataouille

1 medium eggplant, cubed (aubergine)
2 large zucchini, sliced into chunks (courgette)
1 green pepper, chopped
1/2 red pepper, chopped
1/2 yellow pepper, chopped
150 g mushrooms, closed cup, halved
400 g tomatoes, tinned, chopped
3 cloves garlic, diced
10 g chili, red (one whole medium size)
1 tbsp thyme, fresh, chopped
1 tbsp rosemary, fresh, chopped
1 tbsp parsley, fresh, chopped
1 stock cube, vegetable, Oxo
1 tbsp tomato puree
1 tbsp olive oil
1 tsp sea salt
1 tsp black pepper, course ground

Recipe Directions for Easy Quick Rataouille

  1. Heat the olive oil in a large saucepan and add the aubergine (eggplant) and courgette.

  2. Saute for about 5 minutes.

  3. Add the mixed peppers and saute for a further 5 minutes.

  4. Add the mushrooms, the garlic, the chilli and the herbs and mix well, for about another 3 minutes.

  5. Add the tomato puree, the tin of chopped tomatoes, and the salt and pepper. Crumble over the Oxo cube, mix well.

  6. Keep stirring for about 5 minutes, then turn the heat down and simmer for a further 10-20 minutes, stirring occasionally. This will depend on how large your pieces of vegetable were. Check they are cooked, but not mushy, before serving.

  7. Enjoy!
