Each one's made in a muffin tin to serve individually. They freeze great too!

Recipe Ingredients for Easy Quiche

1 stick margarine, frozen, grated into small pieces
1 1/4 cups flour
4 tablespoons water, ice cold
2 scallions, chopped
10 oz frozen chopped spinach, thawed and drained (1 package)
2 cup mushrooms, chopped
6 eggs
1/2 cup mozzarella cheese
1/2 cup Parmesan cheese

Recipe Directions for Easy Quiche

  1. Preheat oven to 425F.

  2. Mix flour and salt together in a bowl. Add in butter. Use your hands to mix dough to a point when it looks crumbly. Be careful not to overmix or it won't be flaky.

  3. Add 4 tablespoons of ice cold water and mix with a fork until blended completely together.

  4. Break dough into 12 even pieces. Take each piece, roll into a ball in your hands then roll very thinly.

  5. Grease a muffin pan [Pam works best] and insert each circle into a cup, creasing the dough as needed to fit.

  6. Bake crust for 8 minutes at 425F. While baking, prepare filling.

  7. Place spinach, mushrooms and bacon in a bowl. Add eggs and egg whites, and stir well. Mix in cheese.

  8. When crust has finished baking, fill each crust cup to the top. Place bake in oven at 425F for 15-20 minutes until edges of crust are lightly brown.
