scrummy pumpkin soup - to make it veggie, use a vegetable stock

Recipe Ingredients for easy pumpkin soup

5 cup (1" cubes) Pumpkin
27 grams Olive Oil
64 grams Carrots
75 grams Onions
60 grams Celery
1 Cube(6 g) Stock Cubes
800 grams Water
150 ml wine

Recipe Directions for easy pumpkin soup

  1. dice the onion, carrots & celery and cut the pumpkin into inch cubes

  2. sweat the onion, carrots and celery off in a tbsp of olive oil

  3. add the pumpkin after 5 mins and fry lightly

  4. after a couple minutes, add the water and bring to the boil

  5. cook until the pumpkin is soft

  6. blend.

  7. serve with a couple tsp of good extra virgin olive oil drizzled over the top
