Recipe Ingredients for Easy Pumpkin Curry

2 cup (1" cubes) Pumpkin
1 can Chick Peas
1 medium (2-1/2" dia) Onions
4 oz Lentils
2 cup, chopped Carrots
2 serving Bouillon
2 tbsp Extra Virgin Olive Oil
2 clove Garlic
5 tbsp Curry Powder
1 cup Diced Tomatoes
1 tbsp Tomato Paste
5 tsp Classic Dijon Mustard

Recipe Directions for Easy Pumpkin Curry

Heat oil in a heavy-bottomed pot. Add curry powder and 'release' the flavours for two minutes, stirring occasionally. Add mustard, tomato paste, onion, garlic, pumpkin and carrot. Fry for 5 minutes. Add two cups of water (this is including stock, so just two cups of stock if you're using liquid form) add lentils and chickpeas and bring to boil. Then turn down heat and simmer for at least half and hour or the pumpkin tears apart easily. Great with brown rice!
