I love to have this creamy polenta in the morning while it is soft and creamy instead of oatmeal.

Recipe Ingredients for Easy Polenta

2 cups of water
1/2 cup of cornmeal
1 tablespoons of margarine
1 tablespoon of ricotta cheese
1 teaspoon of salt
1 dash of pepper
1 tablespoon of fresh parsley

Recipe Directions for Easy Polenta

  1. 1. Bring water to a boil.

  2. 2. Slowly add the cornmeal and whisk constantly.

  3. 3. Cover and let simmer for around 3 minutes. You need to watch constantly so that it doesn't burn. You want it to become creamy not lumpy.

  4. 4. Remove from the stove top and add the butter, ricotta, salt and pepper. Mix well.

  5. 5. Serve while hot and top it with parsley.

  6. 6. Enjoy!
