A quick and easy vegetarian meal. Cheap and tasty!

Recipe Ingredients for Easy Poached Egg and Pasta

0.33 lb. whole wheat pasta
1 cup marinara sauce, no-salt added
1 egg
4 cups fresh or frozen spinach
1 tbsp parmesan, romano, asiago cheese, shredded

Recipe Directions for Easy Poached Egg and Pasta

  1. Boil pasta according to directions on package.

  2. Heat the sauce in a small skillet over medium-low heat. When sauce starts to bubble, carefully crack egg onto the top. Cover and cook until egg has reached the desired doneness (you want the yolk to runny; some carryover cooking will occur.)

  3. Add the spinach to the pasta just before you drain it. Stir and drain well.

  4. Place pasta in a bowl and top with the sauce and poached egg.
