Recipe Ingredients for Easy Pepper Steak

4 tsp. olive oil
12 oz. lean beef, cut into strips
2 medium green peppers, cut into strips
1 large onion, sliced thin
1 clove garlic, minced
6 oz. tomato paste
3/4 c. water
1 tsp. salt
1/4 tsp. black pepper
1 tbsp. soy sauce
2 tbsp. cornstarch
1 tbsp. sugar
1/4 cup cold water
2 cups cooked brown rice

Recipe Directions for Easy Pepper Steak

  1. Heat olive oil in dutch oven over meadium heat

  2. Stir in beef until mostly brown, add onions and garlic

  3. Saute 5 minutes

  4. Add peppers

  5. Add tomato paste, water, salt, pepper, and soy sauce.

  6. Stir until tomato paste is well-blended.

  7. Cover and simmer over medium low heat until peppers are tender to taste. (around 20 minutes).

  8. Whisk together corstarch, sugar and water in a small bowl, add to meat mixture - stir until sauce is shiny and slightly thickened.

  9. Serve over brown rice.
