Easy and Tasty soup for cold nights, or as a nice appetizer.

Recipe Ingredients for Easy Pea-sy Soup

2/3 cup Fresh Frozen Petite Peas
1 large Egg, Whole
1 cup raw Savoy Cabbage
1 small Onions
1 Cube Chicken Stock Cubes
1 tsp Pepper, Black
1/2 tsp Salt, Kosher
4 cups Water

Recipe Directions for Easy Pea-sy Soup

  1. Spray a saucepan with cooking spray. Chop a small onion and sauté until it starts to become clear.

  2. Add shredded cabbage, and any additional cooking spray to keep the vegetables moist.

  3. When the cabbage has cooked down a bit, add the peas and continue to sauté until everything begins to soften.

  4. Add enough water to make it a thin soup, about 3-4 cups (you can boil the water before hand, which will cut down overall cooking time). Break up a chicken stock cube (or vegetable cube) and stir allowing to melt into the soup.

  5. Season with enough salt and pepper to your taste.

  6. When the soup is almost done (heated through nicely), scramble a large egg or two smaller eggs, and drop into the boiling soup, quickly stirring to evenly stream the cooked egg throughout the soup.

  7. Allow to simmer until the egg if fully cooked, and then serve hot.
